Vik’s Hidden Veg Bolognese Sauce
I love making this as I can use all the left over veggies for the week and turn it into something tasty that all the family can enjoy. So quick and easy and a great way to increase your daily Vegetable intake. I use a minimum of 1kg of Vegetables, I have used up to 2.5kg!!!
Mince
500g grass-fed beef mince
3 cloves garlic
1 large onion
50g Grass-Fed butter
2tbs mixed herbs
Salt and Pepper to taste
1tbs bone broth powder (optional)
1tsp tumeric (optional)
50g tomato paste
Veg Sauce (1kg mixed vegetables)
1 large beetroot
1 carrot
4 Mushrooms
2 medium zucchini
2 stalks celery
Handful of spinach
1 can tinned tomatoes/ 4 fresh tomatoes
Method
Step 1- Add vegetables to TM Bowl, Blend speed 9, 10 seconds, scrape down and blend again as needed.
Step 2- Cook Vegetables 15min, Speed 2, Varoma
Step 3- While the vegetables are cooking, Add Butter, chopped onion and garlic to frypan – Cook for 5 minutes
Step-4 Add mince, Herbs, salt and pepper and bone broth to frypan on Medium Heat. Cook for approx 10 minutes until mince is no longer red.
Step 5- Add Tomato paste to frypan, mix through
Step 6- Add Veggie Sauce to frypan and mix through, Simmer on low heat for 5 minutes.
