Sweet Potato and Chickpea Curry
- 2 tins Chickpeas
- 2 sweet potato’s
- curry powder
- onion
- garlic
- coconut cream
- 420g tin tomato’s
- 2tbs tomato paste
- water
METHOD
1. Dice onion, mince garlic, cube sweet potato and add all other ingredients into a slow cooker for 6-8hrs
2. Steam up some rice to go on the side
LIZ’S PUMPKIN SOUP
- 1kg Pumpkin
- 1 Onion
- 4 Cloves Garlic
- 3cm chunk Ginger
- 1 Sweet Potato
- 1 carrot
- 1 tsp Chinese Five Spice
- Vegetable stock paste
- 1L Water
METHOD
- Cut ingredients up and pop them all into a slow cooker on High 4hours or LOW 6-8HRS at the start of the day.
- Using a stick blender carefully blend ingredients until a smooth consistency
Makes 2.5L approx. 10-13Cups
