Sweet Potato and Chickpea Curry

  • 2 tins Chickpeas
  • 2 sweet potato’s
  • curry powder
  • onion
  • garlic
  • coconut cream
  • 420g tin tomato’s
  • 2tbs tomato paste
  • water


1. Dice onion, mince garlic, cube sweet potato and add all other ingredients into a slow cooker for 6-8hrs

2. Steam up some rice to go on the side


  • 1kg Pumpkin
  • 1 Onion
  • 4 Cloves Garlic
  • 3cm chunk Ginger
  • 1 Sweet Potato
  • 1 carrot
  • 1 tsp Chinese Five Spice
  • Vegetable stock paste
  • 1L Water


  • Cut ingredients up and pop them all into a slow cooker on High 4hours or LOW 6-8HRS at the start of the day.
  • Using a stick blender carefully blend ingredients until a smooth consistency

Makes 2.5L approx. 10-13Cups
